Homestyle Brinjal & Potato with Desi Ravaiya Masala

There are certain dishes that instantly remind you of home. Simple ingredients, slow cooking, and the depth and aroma of a well-balanced masala filling the kitchen. 

In this recipe, tender brinjals are filled with our Desi Ravaiya Masala, then gently simmered with potatoes until the vegetables soften and absorb the full depth of flavour. The masala brings together a balanced blend of spices, creating a rich and comforting dish without the need for multiple ingredients from the spice cabinet. 

The result is a flavourful dish that pairs beautifully with roti or simple steamed rice.

What you’ll need 

  • 5 Brinjals

  • 2 Potatoes 

  • 5 tbsp of Nueva’s Desi Ravaiya Masala 

  • 2 tbsp oil 

  • 1½ glasses of water

  • Fresh Coriander (for garnish) 

Preparation

In a bowl, combine 5 tbsp of Desi Ravaiya Masala with 1 tbsp of oil and mix well. 

Cut the brinjals into four lengthwise slits, keeping the stem intact so they stay whole. Carefully stuff the masala mixture into each brinjal. Peel and cut the potatoes in medium-sized pieces, then toss them with the remaining masala so they are evenly coated. 

Place the stuffed brinjals and coated potatoes into a cooking pot. Add 1½ glasses of water along with the remaining 1 tbsp oil, then stir gently. 

Place the pot on high heat and bring it to a boil. Once it begins to boil, reduce the heat to low-medium and allow it to cook slowly. Stir occasionally so the vegetables cook evenly. 

Cook for 20-25 minutes or until the brinjals are soft and fully cooked. When the oil begins to rise to the surface, the dish is ready. 

Finish with freshly chopped coriander and serve warm. 

A Small Tip

If you enjoy the flavour of green garlic, add some along with the fresh coriander for an extra layer of taste.
